so, breaking question parts....

part 1: if want wipe favorites, can close edge , delete contents of following folders:

%userprofile%\appdata\local\packages\microsoft.microsoftedge_8wekyb3d8bbwe\ac\microsoftedge\user\default\datastore\data\nouser1\120712-0049\dbstore

%userprofile%\appdata\local\packages\microsoft.microsoftedge_8wekyb3d8bbwe\roamingstate

this edge stores favorites database.   after deleting this, next time run edge, start fresh no favorites @ all.

part 2: normally, you'd use edge edit or delete favorites.  after you've exposed favorites "pane", there context menu includes items such "sort name", "rename", and  "delete".
